      Preparation: Combine 1-3/4 cups water, 1 cup rice and a pinch of salt. Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used with the same water-to-ratio. 1 cup raw yields 3 cups cooked rice. Cilantro lime brown basmati rice: Cook 1 cup rice in 1-3/4 cups vegetable broth. In small bowl whisk 2 tbs lime juice, 1 tbs olive oil, 1 tsp dried oregano, 1 tsp ground cumin, and 1/4 tsp white pepper or red pepper flakes. Stir into hot cooked rice with 1/2 cup chopped cilantro. Serve in burritos or with chicken or fish.
